Brewing Guidance

  1. Sift the Matcha to remove any lumps and enhance its mellow flavour.
  2. Place 2 Chashaku or 1 teaspoon of Matcha (approx. 1.5g) into the Chawan bowl.
  3. Pour 90ml of hot water (70℃) and whisk the Matcha with a bamboo Chasen until it becomes creamy and foamy.
  • Note: This guidance is for the preparation of Usucha (thin and mild Matcha). To prepare traditional Koicha (thick and strong Matcha), use double the amount of Matcha (approx. 3–4g) and reduce the water by half (approx. 30–40ml). Unlike Usucha, Koicha is massaged into a smooth, thick paste and will not become foamy.
Tips for Tea Connoisseurs
Matcha Samidori comes from a certified JAS organic tea garden in Shizuoka, Japan. Shizuoka is the green tea capital of Japan, home to many celebrated tea gardens set against the scenic backdrop of Mount Fuji.
Our Matcha Samidori is a single-cultivar matcha crafted by our esteemed tea master, Mr. Hattori. He runs his organic, family-owned tea garden using sustainable solar energy. Made exclusively from carefully selected, first-harvest tea leaves of the prestigious Samidori cultivar, this tea is a classic example of the very best competition-grade ceremonial matcha you can find, even within Japan.
Please note that many matchas on the market are blended, meaning tea leaves from different cultivars are mixed together. Blending is primarily used to reduce production costs. Classic, indigenous Uji cultivars (such as Asahi, Samidori, Narino, Gokoh, and Uji Hikari) used to make top-tier ceremonial matcha are incredibly rare and expensive. Blending them with less prestigious cultivars keeps costs manageable and can balance the body and mouthfeel.

In contrast, our pure Matcha Samidori offers an unblended, full-bodied, mellow, rich, and creamy liquor. It features a distinctive nutty and lightly herbaceous note of walnut skin and watercress—all highly desired flavour characteristics for top-notch matcha. The sweetness in the finish lingers long on the palate, offering a truly rare opportunity to experience an organically grown, single-cultivar Usucha matcha.
For true Matcha connoisseurs, we highly recommend tasting our full premium range to experience the distinct nuances of each top ceremonial grade: Matcha Eroica, Matcha Okunoyama, Matcha Asahi, and Matcha Samidori.

What is Matcha?
Matcha is a finely ground green tea powder made from tea leaves that are shade-grown for 3 to 6 weeks before harvest. Due to the limited exposure to sunlight, the tea plants undergo a chain of physiological changes to survive. This alters the chemical composition of the leaves, making authentic Matcha exceptionally rich in protective antioxidants and calming L-theanine.
