Tasting Notes

  • Appearance: Intense, vivid, bright green, cloudy, foamy liquor.
  • Aroma: Delicately sweet, milky, custard cream, baked pastry notes.
  • Flavour: Sweet, buttered steamed greens, umami, nutty, almond milk notes.
  • Mouthfeel: Wonderfully smooth, gentle and well-rounded liquor with silky mouthfeel. Absolute lack of bitterness. Lingering umami sweetness in the finish. 

Brewing Guidance

  1. Sift the Matcha to remove any lumps and enhance its mellow flavour.
  2. Plack 2 Chashaku or 1 teaspoon of Matcha (approx. 2g) into the Chawan bowl.
  3. Pour 60ml of hot water (80℃) and whisk the Matcha with a bamboo Chasen until it becomes creamy and foamy.

Matcha Yabukita comes from an award-winning, historical tea garden in Uji, Japan. For those who haven't been to Japan, Uji is the birthplace of Japanese green tea where many celebrated Japanese tea gardens are located and reputed to produce the best Matcha throughout the whole of the Japanese archipelago. 

Our Matcha Yabukita is a single-estate, single-cultivar matcha made from only hand-picked tea leaves of carefully 4 weeks shade-grown, Yabukita tea cultivar. As Yabukita is a traditional cultivar to make Sencha, we were initially a bit skeptical about this matcha, but what a great surprise after tasting this one! We were really so impressed by the achievement of our great tea master, Mr. Tanaka. 

On the nose of dry matcha, it offers an incredibly gentle, sweet aroma such as baked custard based desserts such as Pastel de Nata. Once prepared as Usucha (thin matcha), Matcha Yabukita offers a wonderfully smooth, mellow and silky infusion with long lasting buttery, nutty and umami flavour (buttered steamed greens and almond milk). Its aroma, flavour and mouthfeel somehow feel quite strikingly similar to Matcha Asahi, one of our top ceremonial Koicha grade matcha, but with a slightly more grassy hint. Seriously, what an achievement for Yabukita cultivar to be reborn in this outstanding matcha.

What is Matcha?

Matcha is a finely grounded powdered green tea, made from tea leaves shade-grown for 3-6 weeks before the harvest. Due to its limited exposure to the sunshine, tea plants undergo a chain of physiological changes in order to survive, which, in turn, results in the changes of the chemical composition of the tea leaves. Produced this way, Matcha tea is extremely rich in antioxidants and L-theanine.
