Tasting Notes

  • Appearance: Vivid, bright green, cloudy, foamy liquor.
  • Aroma: Delicate herbaceous note (watercress) harmoniously accompanied by sweet, nutty aroma. 
  • Flavour: Walnut, rich, buttery, umami notes with a slightly herbaceous finish. 
  • Mouthfeel: Rich, full-bodied, creamy liquor with smooth and refreshing mouthfeel. 

Brewing Guidance

  1. Sift the Matcha to remove any lumps and enhance its mellow flavour. 
  2. Place 2 Chashaku or 1 teaspoon of Matcha (approx. 2g) into the Chawan bowl.
  3. Pour 80ml of hot water (80℃) and whisk the Matcha with a bamboo Chasen until it becomes creamy and foamy.

It is highly smooth, creamy and mellow with rich, nutty and buttery flavours evocative of walnuts and almonds. The buttery, umami sensation in the finish lasts pleasantly long. A hint of very mild bitterness and herbaceous notes in the finish leave a refreshing mouthfeel on the palate. 

Being highly versatile, our Matcha Yame can be consumed on its own in a traditional way or can be consumed as Matcha Latte with your preferred choice of milk. We personally love Matcha Yame with just hot water as "Usucha" (traditional thin matcha), as it's a real top quality ceremonial matcha, which tastes superb on its own. 

But it works perfectly well as a delicious matcha latte - try it with naturally sweet foamy oat milk or with coconut milk (if you're making an iced matcha latte) - the original, nutty sweetness of Matcha Yame beautifully interacts so well with coconut/oat milk and tastes super yummy and healthy. If you are aware of different grades of matcha and regularly try to make Matcha Latte with different matcha on the market (unfortunately there are many unscrupulous vendors in the market who sell low quality, very bitter and herbaceous matcha as ceremonial matcha), you will appreciate the quality of our matcha even more. You will notice that you won't have to add any sugar to make a delicious Matcha Latte with our Matcha Yame, as Matcha Yame is a real ceremonial grade matcha and is hardly bitter on its own.

Tips for Tea Connoisseurs 

Matcha is a finely grounded powdered green tea, made from tea leaves shade-grown for 3-6 weeks before the harvest. Due to its limited exposure to the sunshine, tea plants undergo a chain of physiological changes in order to survive, which, in turn, results in the changes of the chemical composition of the tea leaves.
