Tasting Notes

• Appearance: Transluscent, pale gold coloured liquor.  
• Aroma:  Toasty, nutty aroma combined with a subtle hint of floral and marine notes. 
• Flavour: Sweet, toasty, nutty (chestnut) flavour with delicate, citrusy, floral and cooked vegetal (petit pois) notes. 
• Mouthfeel: Gentle, smooth, rounded liquor with a refreshing mouthfeel. 

Brewing Guidance

• Measure 1g of tea per 100ml water. Boil water to 70℃. Steep for 3 minutes.

Sejak Sparrow's Tongue is a delicious, hand-made, artisanal, spring green tea, originating from Hwagae village, Hadong, South Korea. After receiving so much appreciation and compliments from our customers for our top quality, hand-picked, hand-made, Korean teas, we've now decided to extend our Korean tea offerings in our tea selection. In comparison to our Sejak Tendresse, a Great Taste 3 Star Winner, Korean green tea, coming from Ackyang Village in Hadong, this newly added Sejak is made from wild bush tea leaves on the side of Hwagae village on Jiri Mountain. From the leaf appearance, you'll already notice that the rolling style is different. On the nose and palate, this Sejak is slightly more toastier than Sejak Tendresse, but it still has this touch of long, fruity, finish, which is typical of teas made from naturally grown wild tea bush.

Please note that our Korean teas from Hadong region are made from naturally grown wild tea bushes which yield a delicious, long, sustained, very fine, fruity finish that you also find in some oolongs and puerh sheng teas made from ancient Gushu trees. With Wild Arbor Joongjak, you will notice a slight hint of citrusy-fruity note in the finish, which leaves a refreshing sensation on the palate. 

In South Korea, there are three main tea producing regions - Boseong, Hadong and Jeju Island. While tea gardens located in Boseong and Jeju Island mostly produce industrialised, mechanised green teas, small scale tea gardens around Hadong area continue to produce top quality, traditional, hand-made green and black teas from wild tea bushes naturally grown in the region. While you may often encounter Korean green teas from Jeju Island abroad, top quality, authentic, hand-picked, hand-made, wild bush Sejak green tea from Hadong is not easily available in the markets outside South Korea due to limited production. Our Sejak Sparrow's Tongue offers a rare opportunity to green tea connoisseurs to try real, authentic, entirely hand-made Sejak green tea from South Korea.

Korean green tea is graded according to the date of harvest and the maturity of buds and leaves: Woojeon (First Pluck), Sejak (Second Pluck), Joongjak (Third Pluck) and Daejak (Fourth Pluck). Each grade comes up with their unique flavour and Woojeon and Sejak green tea, traditionally made from one tender bud and two newly opened leaves between mid-late April, are known for its delicate, subtle nutty, floral sweetness. Although Sejak green tea is the next best grade after Woojeon, many tea connoisseurs in South Korea really appreciate Sejak, as the flavour profile is very similar between Sejak and Woojeon and the price is more affordable than Woojeon.

When brewed, Sejak Sparrow's Tongue offers a wonderfully gentle and harmonious liquor filled with delicate toasted, nutty sweetness and a subtle floral, vegetal hint, which evokes the flavour of fine Long Jing Dragon Well on one hand and gracious Bi Luo Chun on the other hand.
